Healthy Mexican Recipes for Dinners
Restaurant-Style Chicken, Rice and Bean Burritos HERE'S WHAT TO PICK UP: Southwest-flavored precooked chicken strips, burrito size flour tortillas, quick-cooking rice, can of seasoned black beans,cilantro, lime juice. Optional garnishes: diced tomato, salsa, light sour cream, guacamole, lowfat cheese.
TO PREPARE: Cook rice according to package directions. When done, add lime juice and chopped cilantro to taste. Chop chicken into large dices. Make burrito with a warmed tortilla stuffed with rice, beans (drained), chicken and desired optional ingredients. TRY SERVING WITH: Fresh fruit
Quick Chicken Tacos HERE'S WHAT TO PICK UP: Southwest-flavored cooked chicken breast strips, 98% fat-free tortillas, reduced fat shredded cheddar cheese, tomato, lettuce, salsa, light sour cream. TO PREPARE: Warm the tortillas and chicken, and make your own taco! TRY SERVING WITH: Fat-free refried beans and fresh fruit chunks.
Bean and Cheese Burritos Here's what to pick up: A can of fat-free refried beans with green chilies and lime, reduced fat cheddar or jack cheese, reduced fat whole wheat tortillas, salsa, tomatoes. Just fill a tortilla with some beans and cheese, fold and microwave until hot. Top with salsa and chopped tomatoes. TRY SERVING WITH: Light sour cream (optional), baked tortilla chips, spanish rice.
Chicken Fajitas
Here's what to pick up: Cooked southwestern-flavored chicken strips, bag of frozen sliced green peppers and onions, lowfat flour tortillas, light sour cream, salsa. Heat chicken strips and peppers/onions. Serve in warm tortillas with sour cream and salsa. TRY SERVING WITH: Fat-free refried beans, or black beans
Margarita Chicken
I don't usually include dinners that call for advance prep work. But this one is so easy and good, I had to include it!
Here's What to Pick Up: Boneless, skinless chicken breast, prepared margarita mix. Staples you'll need: olive oil, chopped garlic In the morning, simply add chicken, enough margarita mix to cover, a couple tablespoons of olive oil and a couple cloves of garlic to a ziploc bag. Give it a little toss and then refrigerate. When ready to eat, grill or broil the chicken (discarding marinade). TRY SERVING WITH: Low-sodium black beans, corn and fresh fruit.
Light Taco Salad
Sometimes nothing tastes as good as a fresh-made taco salad!
Here's What to Pick Up: : Chopped lettuce, diced tomatoes, lowfat cheddar cheese, a rinsed and drained can of kidney beans (or black beans), taco-seasoned cooked ground turkey. Also, if you go easy on quantity, a little light sour cream and avocado or guacamole would be great. Top with salsa. TRY SERVING WITH: Reduced fat tortilla chips and fruit
